The Unofficial-but-Close-Enough Jordan Pond Popover Recipe*

Back in 1895, Nellie and Thomas McIntire bought a Maine farmhouse overlooking the clear waters of Jordan Pond. On their wide green lawn, they served tea and towering popovers to well-to-do summer travelers. In 1928, J. D. Rockefeller purchased the land and later donated it to Acadia National Park. The lawn remains. The view remains. And the popovers? Still iconic.

While the original recipe is famously guarded, this version comes deliciously close.

Makes 6–8 large popovers.

What You’ll Need

  • 4 large eggs
  • 2 cups whole milk
  • 2 cups all-purpose flour, sifted
  • ½ teaspoon kosher salt
  • Pinch of baking soda
  • 2 tablespoons melted butter

Let’s Make Them

  1. Start with a hot oven (and a hot pan).
    Preheat your oven to 425°–450°F. Place your popover pan (or a muffin tin) in the oven while it heats.
  2. Whisk the batter.
    Beat the eggs for about 2–3 minutes until slightly frothy. Slowly pour in the milk, then add the flour, salt, and baking soda. Mix just until combined. The batter should be smooth but not overworked.
  3. Fill the cups.
    Carefully remove the hot pan from the oven and grease it generously with butter or spray. Pour the batter into each cup, filling them about halfway to three-quarters full.
  4. Bake.
    Bake at 425°–450°F for 15 minutes. Then, without opening the oven door, reduce the temperature to 350°F and bake another 15–20 minutes. The high heat creates the lift; the lower heat helps them set inside.
  5. Resist the urge to peek.
    Do not open the oven door while they bake. The steam inside is what makes them puff and keeps them tall.

Serve immediately with plenty of butter and strawberry jam.

A Few Tips for Sky-High Popovers

  • Room temperature matters. Cold eggs or milk will slow the rise. Let them sit out a bit before mixing.
  • Heat is your friend. A properly preheated pan jump-starts the puff.
  • No peeking. Steam is everything here. Let the oven do its work.

My Impressions

“The best stories are the ones God unfolds in his perfect timing. It’s always best when we let God write our story.” 

Suzanne Woods Fisher. Another auto-buy       paperback for the trophy shelf author! While Chase the Light, a novel about Acadia National Park,  is a stand-alone, I would highly recommend reading book one first, as several relationship groundworks are set up. 

I love that Fisher includes a list of characters in the front of the book and a description of each. With a year between books, the reminder of who’s who is helpful. We see returning characters like Chief Ranger Tim Wilson, his manipulative 15 yr-old-granddaughter Maisie, clueless 18 yr-old Frankie, and a few tertiary characters who momentarily step up for short, but notable contributions. We are also re-introduced to FMC Scout Johnson, a dedicated park ranger who has worked her way up to her dream job, interpretive ranger in Acadia National Park. 

Frankie and Maisie with their self-absorbed, centrisic attitudes cause quite a ton of problems. But they also step forward to become central secondary characters. They add so much color to the story, instigating (by carelessness!) the discovery of the 170-year-old park secret. 

At first, I was #TeamChase. He seemed like a very nice man, good looking, church -going, newspaper owner, passionate about his work, and fun to be around. Good match for Scout, right? (Oh, did I say Frankie is clueless? Chase can be, too! He sure doesn’t read relationships well! Sometimes, I was left just shaking my head at his interpretation of events!!)

But, as the story went on, another man, Wananaki Dana, a Penobscot Native American policy maker whose side passion is Maine shipwrecks caught my eye (and Scout’s).  A fun line inserted repeatedly- “Naki will do.” His passion is to help his people out of generational poverty, alcoholism, lack of education, and other issues that plague a people forced onto a reservation. And does he understand Acadia National Parks! He just might be a tad bit tall and a tad bit swoony, too! But as Chase’s mother once communicated to him, “…a person’s looks became subjective the moment you got to know them. They grew more attractive, or less.” Which man, by his very different choices in the difficult circumstances that arise following the lighthouse discovery, will end up showing a solid character?

With themes such as family relationships, forgiveness, moral character choices, found family, second chances, and even maturation, this novel is a must read. Great for National park lovers, Maine lovers, shipwreck lovers, those who love to see how choices can make or break a character. Plus, the mystery, the romance, the faith. Nearly something for everyone in an easy-flowing readable style! Pretty sure this one will be pulled for a re-read!!

Le Sigh! Instant love. Not the characters. Me for this book, Shipwrecked Faith, by Danielle Grandinetti. The first of a new series about a family of Irish immigrants, we find ourselves plunged into mystery and intrigue in the first sentence. What is Kellan O’Rourk up to? We quickly find out there is a betrayal going down, between Kellan and his older gangster cousin, Tiernan. “Family was complicated, yet family didn’t betray one another.” Especially not in October 1929 in crime-infested Chicago. Now, he must flee. 

Our heroine, Sadie Dawning, has just received a telegram summoning her home from her city job. She is desperately needed to help care for the family farm and her near- death father. 

As Sadie enters the Union Station to catch a train, she finds herself accosted by thugs. A stranger rescues her, then whisks her away through the streets of Chicago. Once they realize Sadie also needs a way home that no longer includes a train ticket, Kellan convinces Sadie to disguise herself and stow away with him on the SS Wisconsin. You’ll have to read the book to find out why that method of travel is the one Kellan is sure will keep Tiernan from discovering his whereabouts. 

I want to research this shipwreck now. One hears much more about shipwrecks on Lake Superior than Lake Michigan, and it’s easy to forget that Michigan has also buried her boats and victims. How terrifying a time Kellan and Sadie have. Can Kellan keep his promise to Sadie to deliver her safely home? “‘I’ll get you home, Sadie. I promise.’ Determination laced his tone. ‘I have my own penance to observe.’” In throes of imminent death, Kellan considers the faith of his mother. “What was he thinking? How could he consider giving his new life to God? With his past, what good could he do?” But God is at work through Mr. Downing. He reminds Kellan, “God sees the heart, and there is always hope for mercy and grace when you put your faith in His son.”

I love the many layers of this story. The physical dangers of the lake. The running from the low-level gangster. The questioning of one’s past making one unacceptable to God. The sister rivalries. Ooch, one sister tries to shoulder all responsibility in her own way, another misinterprets her sister’s intentions and holds resentment. Plus, tries to solve the family’s problems her way. Yet, another feels unseen with the badly ailing father, the “favorite” daughter (as sisters view it), and the disastrous plans of another sister. Surely she is not needed. ( I hear fodder starting for more books! I love these foreshadowed hints!) And, still more trials to surface! 

Mr. Downing, with his sickness, is a fave character as he works hard to be intentional with his daughters and now with Kellan. It’s as if he can see to Keegan’s soul.  When Kellan dodges the question of what his intentions are for Sadie, he states they haven’t known each other long. While agreeing, Mr. Dawning sees what Kellan can’t- that trials also reveal character and feelings. “Love, the kind that makes a marriage, takes time and work to deepen. Trial—the type that leaves one’s wife unable to walk without crutches or a husband unable to take care of his family—it reveals what type of love is between you.” 

I love everything that Danielle Grandinetti’s writes. Shipwrecked Faith is a great chance to get in on a new historical romantic suspense series at the beginning. Highly recommended!

Superior! I always exit a Grandinetti novel with deep satisfaction, but deep regrets that it’s over. Shipwrecked Faith continues in that wonderful tradition!

My Impressions

Misty M. Beller calls us back to 1869, the rugged Montana mountains, and the determined ranchers that live there. This series, Lords of the Rockies, involves an English family of the nobility whose mother brought her young sons to the American West. This is the second book, Mail Order Baroness.

James, one of four remaining Balfour brothers, hopes to reunite with a childhood friend, Rose Prescott, as the solution for the ranch’s need for more help for elderly Mrs. Wang. 

When Rose answers James’s inquiry for household help, she warms up to his brothers quickly. While this wouldn’t be surprising since she had actually lived with the family earlier in life, she treats James like a hazard to be avoided. I must admit, I got a little tired of all of James’s jealousies! Fortunately, James redeems himself by being very protective of Rose, proving his love by the lengths he will go to, to ensure Rose’s safety. 

Rose, for her part,  remembers James and their original friendship more than she wants to admit. Forced into a life a servitude with no end in sight, she loves the warmth and safety of the ranch. But will escaping to the ranch endanger the others here? Or just her own heart, that longs for unconditional love and being seen as worthy? “Vincent had taught her that love was something you earned through perfect behavior. It always felt like God’s favor was like that too—contingent on flawless obedience.” Can James and his family show her differently?

Just when hope for escape from her servile way of life opens up, discoveries occur that cause unease and danger. Will God hear her cry for help this time? What will happen when Rose tells James the truth about the past?

Found Family, unconditional love, broken things redeemed, & Faith reclaimed are all themes of this romantic western. You will probably want to read these books in order to get the most out of this series. And, sigh, the online epilogue already has me curious and intrigued about how  Thomas’s story will shape up!

My Impressions

“Could there actually be more to life than baseball?”

I had never read any of Tara Randel’s A Golden, Georgia Romance series before. Now that I’ve finished book #2, The Single Mom’s Second Chance, I’d like to revisit this small town where everyone knows your name, and unfortunately, your business as well! I love how main character Addie one day realizes that she and her  8-yr-old son Jacob have not only a supportive family, but friends and neighbors who rally together to support each other, as evidenced by the town’s support of the summer rec boys’ baseball team.

But I need to back up. Addie and her young son have moved back to her hometown of Golden after her husband’s death. While that brings family support, Addie is just beginning to rebuild relationships with her sisters that were severely damaged following their dad’s betrayal. Between her father and her husband, Addie has learned that she will never be first in relationship and has determined to stay out of romantic relationships rather than open herself to hurt. 

The return to town of her long-time friend, Nolan, an injured professional baseball player, threatens her promise to herself and her sanity. Nolan becomes Addie’s business partner in her life’s dream of opening a fitness center, then becomes the coach of the town’s rec baseball team as Addie realizes her parental enthusiasm isn’t enough to make her a good volunteer coach. 

It took me some time to get myself truly invested in the story, but by the midway point, my interest was thoroughly piqued. I enjoyed seeing glimpses of each of the Connelly sisters as well as their mother, and getting insight into their life as well. 

Poor Nolan, whose career is everything to him, has to ask himself some questions. “Who am I without baseball?” he whispered.  He is afraid to find out what life might be like without the driving force of his life.  He does get lonely, because his intense career focus means he has few friends. He wonders if “putting baseball first meant he’d always feel this alone.” Dare he pursue a relationship with Addie, when he can’t promise a future?

Coach and Linda are tied for my fave supporting secondary characters. Linda because she has found a way to forgive the past, is an incredible grandma, business owner, plus she develops a story thread of her own. But her love and care are examples for her girls to follow. And Coach? He is constantly showing up for Nolan, encouraging him in all endeavors, not just those of the professional team. He pulls no punches with Nolan, and strongly encourages him to be all that he can be.

Life has a funny way of mirroring fiction at times, and that happened to me with Fatal Past—but not when I was writing it! I wanted my hero’s (and heroine’s) son to be school-age but not too old, so I picked second grade, which put him at age 7. This is such a fun age, as they are independent and inquisitive, and you start to really see their personalities develop.

Little did I know when I wrote this last fall that I would be teaching twenty-three second graders as a long-term substitute this current school year! I began in mid-September and will continue through early March while their regular teacher is out on maternity leave. It’s been challenging but rewarding as they expand their knowledge and build on their kindergarten and first-grade foundations.

My Impressions

“Your days are numbered.”

Sarah Hamaker’s romantic suspense novel, Fatal Past, draws me in quickly.  Dr. Eve Davenport‘s peaceful, secluded days become a thing of the past when she foils a kidnapping attempt of a seven-year-old boy. Eve, of Twin Oaks, VA, is astounded to discover the boy’s father is her high school sweetheart from Boston. 

Jefferson Smith despises Eve for deserting her baby years ago to follow her ambitious career path. 

This is a great story of nonstop action, two very relatable people with a connected past (which makes their working together difficult) and an adorable, true-to-age little boy! Life isn’t always what we see is one lesson we learn, and we must learn to really get to know people beyond what they present on the surface! One thing I really love is something hubby and I discuss often. Do people move beyond their high school personas as they mature into adulthood, or do they cling to their stunted, not-yet- developed adult thinking? Assumptions of others’ motives, forgiveness, and a great twisty mystery make this a book I love! 

Fatal Past is the first book in the Twin Oaks Secrets Series, so this is a great time to jump in! I can’t wait for the next book, Fatal Recall, due this summer!

As with others of Penny Zeller’s Christian historical romances, Love in Time is a poignant story of two souls with different soul needs, wondering if they dare bare their hearts to another. Told with an easy-going style, humor, and real faith lessons that can be applicable to life today, Love in Time captured my heart. 

Secrets from the past is something both Malachi and Arrosa have in common. Why does Arrosa have the manners and memories of high society, yet need to work as a nanny? Why can Malachi never seem to open up about his boyhood experiences to Arrosa, no matter how much she shares with him?

Family. Such an important part of this story. Arrosa is very close to her sister and mother, and even her absent father. Each affects how Arrosa ends up in Hollow Creek. I loved those connections and those of the Evanson family, and how they treat their workers as part of their family. What a positive influence! And then there is Malachi. Doing his best to break free from his original father, he has been searching for belonging ever since. Will he find it on the Everson ranch and with his close friend, Arrosa?

I loved how there are people with physical limitations in the book. This gives the characters a special need to develop perseverance and grit ( and do they!). It also gives others an opportunity, esp. our hero, Malachi, to look for ways to be a special and effective helper. 

There were a few heartbreaking scenes in the novel, plus a few twists that caused me quite a bit of consternation, let alone the characters affected!! 

But what I loved best of all, was couched in this gentle western romance, are Truths the characters learned that we would do well to heed today. “Why was it such a challenge to forget the past? The Lord had given him a future.” This particular truth would’ve been a whole lot easier for Malachi to practice if he didn’t feel tied to his past, and if it didn’t come back to strangle him! And as Arrosa says,  thinking of her past health challenges and how they could affect her future, “I find myself entrenched in trepidation, even though I know the Lord will carry me through whatever I may face.” Arrosa also personally gives me new insight into how frightened my own mother must have been years ago when she contracted Arrosa’s disease. 

I must say, my fave secondary characters are the children, but especially little Mamie. And the barn scene ! Le sigh! True love causes us to do strange and wonderful things!!

The best dreams were the ones that came true.

And Magnolia Davenport’s dreams were about to come true. She could feel it in her bones, as old Mrs. Fryman used to say.

She took a step back and scanned the bustling city. Hadn’t she read in a discarded newspaper that Chicago had reached over a million people? Yes, her decision to travel West would be a good one.

The train depot beckoned her, and she entered the stately brick Dearborn Station with its enormous clock tower. Folks hurried in every direction. Hopefully, with twenty-some railroad lines and countless departures, one of those departures would surely lead her to the new life that awaited her.

For what could she do? The two dollars she’d saved would only be for absolute necessities.

The lines to purchase tickets meandered through the building. Mags stood on tiptoe to see the departure signs when she noticed a wealthy couple in front of her in deep conversation.

“I anxiously anticipate seeing our grandchildren again,” the woman, who wore an elegant dress of the latest fashion, said.

“Yes, well, I’m never fond of visiting Horizon, but I know how much it means to you, and it’s been all of two months since we saw the grandchildren.”

“Indeed, Bertram. I miss them the second we board the train for Denver, and this time, having been in Maryland, I miss them all the more. Besides, Horizon is such a lovely place, and the people are so kind. I’ve actually made a few friends there.”

The man named Bertram, in the finest of silk hats, grunted. “Yes, Gladys, we all know you’ve made friends in Horizon.”

The topic that Bertram and Gladys spoke about intrigued Magnolia, and she stepped closer. Horizon sounded like just the place she’d like to live, especially if people were kind. Goodness knows she’d had her share of spiteful and cruel people in Chicago—many of whom were related.

My Impressions

“The best dreams were the ones that came true.”

A breath of fresh air. Penny Zeller’s historical romances set in the West are always a joy to read. A gentle romance, soaked in faith, coated with humor, and easy to read, Love on the Horizon is the fourth novel in the Horizon series. This is Mags’ and Timothy’s story. And what a story it is! With a vibe akin to the Little House series on TV, we see hurting hearts longing for belonging. 

Mags is the most prominent hurting heart. Little by little, her childhood trauma is laid bare. We see her desperation to be on her own, so much that she would attempt to ride the rails (without paying) all the way from Chicago to Idaho. Much humor results, and Mags is amazing in her quick-wittedness and her ability to con people. But her conscience is calling. Or is that the God Mags has decided isn’t listening to her prayers?

 I loved the other main character, Timothy, and how his family is so warm and loving. And loud, and nosy, and concerned that Timothy needs a beau! And spectacles! Interesting view on spectacles back then. I’m glad times have changed, or I think there’d be a lot of near-sighted people stumbling around! Timothy’s best quality may be that he cares for others in need. And he takes action. 

Not only does Mags originally come to his attention this way, but so does my fave secondary character, Ozias. Part young boy, part entrepreneur, part shyster, and part provider, it’s impossible not to love this imp as Zeller draws him. “If we see a way we can make a difference, then the Lord expects us to step up and do so.” I am amazed at the results a caring man, family, and town can make. 

Will Mags be able to accept that God has not answered all of her prayers as she wanted, but He still loves her and is giving her a second chance? Will Timothy overcome his pride to accept his limitations and the help available? 

I definitely hope that there will be one more book. Ozias deserves his own story!

“William’s bride arrived today.” – Thomas

Such an innocuous statement. If only! Misty Beller successfully sets up another series, this one also a family of brothers needing wives. In her newest series, Lords of the Rockies, Beller combines the Old West mountain frontier with Regency romance. Book one, Mail Order Duchess, introduces us to the five brothers, minus one. William, the one who wrote East for the mail order bride, dies before his intended, Mandie Beaumont, reaches the ranch. Hop down a stair from first brother to second brother, Enoch. Raw with grief, duty-bound to take over his brother’s roles including returning to England as the next Duke, Enoch discovers communication in the West can be faulty. Now, a woman he’s way too attracted to, is staying at the ranch, and as oldest, it’s his duty to make sure Mandie stays safe. Not easy when she arrives with amnesia and secrets. 

I loved getting to know the four remaining brothers a little. Each presents enough that my appetite is ready for their individual story. And of course, Enoch is our main “hurt” hero. He’s lost so many people dear to him, he now has erected walls of bronze around his heart. As Mandie comes to know him a bit, she asks him about his past. ‘It’s in the past. I’ve learned to live with it.’ ‘But you haven’t learned to live beyond it.’ ”

Could a Southern Belle really transplant well into the untamed land of Montana territory? Enoch has his doubts as he first meets Mandie. “This territory didn’t care about grit or good intentions- it chewed up the strong and the weak alike.”

Beller works her writerly magic on the words that flow, beautifully describing the     open sky and mountainous scenery. If I could sketch, I could sketch a drawing of the ranch in different scenes. I could certainly imagine myself as Mandie, in the ranch cabin, laughing with the brothers, talking with Enoch, trying to reason away his resistance. Or being Enoch and trying so hard to keep his heart safe. Can God help these two get beyond themselves before they destroy any chance of happiness together?

Beller also adds in just enough danger and twists to keep the fingers flipping the pages. And at the end, like me, the reader will probably find themselves begging for the next brother’s story already!

My Impressions

“God places the lonely in families.”

The perfect cozy to read on a cold, blustery day, Sabotage at Silver Creek by Janice Thompson takes place in the idyllic, but hot, Texas countryside. Peach cobblers, pies, cookies, and all other sorts of delicious edibles parade through the pages of this second Little Red Truck  who dunnit. And don’t forget the Texas Blue Bell ice cream!

Successfully avoiding eating ( but just barely!) while reading this twisty tale, I was happy to see RaeLyn Hadley and her tight-knit family, plus her bestie, Tasha Dempsey. It seems Tasha is ready to open her AirBnb, but sudden glitches start to arise. Poor Tasha worries about the new mortgage payments she has taken on, as RaeLyn, her boyfriend Mason, her brother Dallas, and her aunt, Bessie Mae, all rally to help Tasha. 

To enjoy this book best, you need to read book one, Tracking Tilly first. Otherwise, you’ll be in for a lot of spoilers. Clayton is just as despicable as he is when we first met him, although we view some around him a little differently. Mason is an incredibly patient man, willing to see the best in everybody and give anybody a second chance. (“Sometimes people just need to be given a chance.”) He is very loyal and encouraging. One of those people who could “…foster open communication and cooperation. He also seemed to know how to address concerns and dispel problems.” Also great at unifying people. 

I was a bit disappointed in the “girls,” as they were quick to lay suspicion and slow to look as carefully for multiple suspects as I wanted them to. Conner amazes me. With a less than stellar background, he could choose to become what everyone thinks he is…and that certainly would be the much easier choice. Bessie Mae is one of those aunts that few families have, but wow, she adds so much to the life of the Hadley family! 

Spending time with RaeLyn and her family and friends, you will get that warm, fuzzy feeling like you have been included among family as people gather for celebrations, to plan events, or to catch culprits. 

I was surprised by the reveal of the guilty. I am pleased to note there is a third book in the offing.

Finally! Buck and Caroline’s story is here in book 6 of Harbored in Crows Nest, Investigation of a Journalist. Ever since book one (so yes, it really helps to read these books in order ) Buck has been a stumbling block to the upright citizens of Crows Nest. David Martins, one of the first characters we learn to love, considers Buck a thorn in the flesh at best, an enemy of those who want to make an honest living. 

As we finally meet Caroline (Carrie), the Chicago journalist who Buck dropped like a hotcake a month before their wedding, some blanks in Buck’s past begin to be filled in. (There will be some blanks in your understanding, too, if you skip this prologue!) What happened to the wonderful man Carrie thought Buck was, before he broke their engagement and disappeared to Crows Nest?

On procuring info of a counterfeiting ring and being asked for help by Buck himself, Carrie goes undercover in Crows Nest. What she and Buck uncover will either incriminate Buck and send him to prison or prove him innocent and uninvolved with the irregularities occurring in the Conglomerate.
